Spicy Atkins-Friendly Chorizo Skillet

Ingredients

  • 2 tbsp olive oil
  • 4 oz Mexican chorizo, casing removed
  • 1/4 cup onion, diced
  • 1/4 cup green bell pepper, diced
  • 1 jalapeno, minced
  • 4 large eggs
  • 1/4 cup shredded cheddar cheese
  • 1/2 avocado, sliced
  • Salt and pepper

Steps

  1. Heat olive oil in a skillet over medium heat.
  2. Add chorizo, cook until browned (5-6 min).
  3. Add onion, bell pepper, and jalapeño; sauté until soft.
  4. Crack eggs into the skillet and cook to desired firmness.
  5. Top with cheese, let melt.
  6. Serve with avocado slices.
